What's the difference between the expressions in the title?

e.g.:
"In the big field of electronics, electronic measurements is the subject that fascinates me the most."

quello con the è il superlativo e andrebbe solo in frasi tipo the most <...>
a volte abusato perché a qualcuno piace sul suono di "the" o vuole rafforzare che "quella" è la cosa "più" <cosa> e solo quella come per dire che non c'è una seconda o che tra quella e la seconda per importanza c'è un abisso

Non mi suona sbagliata la prima, però effettivamente la seconda credo sia più corretta visto che è usato come avverbio come dovrebbe essere, mentre nella prima ci vedo un thing sottointeso (What thing fascinates me the most..).

A me suona molto bene anche:
What most fascinates me..
decisamente senza articolo
è corretta?
